Ingredients
  

  • 2 cups graham cracker crumbs 260g
  • 1/2 cup unsalted butter melted (113g)
  • 1 cup powdered sugar 120g
  • 1 tablespoon vanilla extract
  • 2 cups heavy whipping cream 480ml
  • 4 blocks 8 ounces each full-fat cream cheese, softened (908g)

Method
 

  1. Prepare the Crust: Combine graham cracker crumbs, melted butter, and powdered sugar in a medium bowl. Press the mixture into the bottom of a 9-inch pie dish or springform pan. Refrigerate while preparing the filling.
  2. Make the Filling: In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until combined.
  3. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Combine: Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  5. Assemble: Pour the filling over the prepared crust and smooth it out. Cover with plastic wrap and refrigerate for at least 4 hours (or overnight for best results).
