  • 1 cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
For the Apple Filling:
  • 4 medium apples about 600g, peeled, cored, and sliced
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
For the Crumble Topping:
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter cold and cut into small cubes

Method
 

  1. Prepare the Apple Filling:
  2. Peel, core, and slice the apples. In a saucepan, combine apples, sugar, cinnamon, lemon juice, and vanilla. Cook over medium heat until apples soften but still hold their shape (5-7 minutes). Stir in flour to thicken the filling.
  3. Make the Shortbread Crust:
  4. Preheat oven to 350°F (175°C). Beat together the butter and sugar until fluffy. Add egg and vanilla, then mix in flour, baking powder, and salt to form a dough. Press about two-thirds of the dough into a greased 9×13-inch pan.
  5. Bake the Crust:
  6. Bake the crust in the oven for 15-20 minutes, until golden around the edges.
  7. Assemble the Squares:
  8. Once the crust has cooled slightly, spread the apple filling evenly over the crust. Roll out the remaining dough and place it over the apples. For a rustic look, crumble the dough on top.
  9. Add Crumble Topping:
  10. Combine flour, brown sugar, cinnamon, and salt. Add cold butter, mixing until the topping is crumbly. Sprinkle over the top of the assembled squares.
  11. Bake the Squares:
  12. Bake for 35-40 minutes at 350°F (175°C), until the top is golden brown and apples are bubbling.
  13. Cool and Serve:
  14. Allow the squares to cool for 15 minutes before cutting into squares. Serve warm or at room temperature with your favorite toppings.
