Method
To Make the Brownie Base:
- Preheat oven to 350°F (175°C). Prepare a 9×13-inch baking pan by greasing it with butter or lining with parchment paper.
- In a large bowl, combine the melted butter and granulated sugar. Stir until smooth. Add the cocoa powder, mixing until well combined. Add the eggs, one at a time, stirring after each addition. Stir in the vanilla extract and salt.
- Gradually add the flour and mix until just combined. The batter should be thick.
- Pour the batter into the prepared pan, spreading evenly. Bake for 20-25 minutes or until a toothpick inserted comes out with just a few moist crumbs. Let cool completely before adding the mousse.
To Make the French Silk Mousse:
- Melt the semi-sweet chocolate by microwaving it in 30-second intervals, stirring after each, until smooth. Set aside to cool slightly.
- In a stand mixer, beat the softened butter until creamy. Add the powdered sugar and beat until light and fluffy.
- Add the egg yolks one at a time, mixing well after each addition. Add the vanilla extract and salt, mixing until smooth.
- Gradually add the melted chocolate and mix until combined.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until smooth and well combined.
To Assemble:
- Once the brownies have cooled, spread the French Silk Mousse evenly over the brownie base.
- Refrigerate for at least 2 hours to allow the mousse to set.
- Once set, slice into 12-16 squares and serve!
Notes
- Chill Time: Make sure to refrigerate the brownies for at least 2 hours for the mousse to fully set and firm up.
- Room Temperature Ingredients: Ensure the butter is softened and the eggs are at room temperature to achieve a smooth mousse.
- Storage: Store in an airtight container in the fridge for up to 1 week. The brownies can also be frozen for up to 3 months.
- Customization: You can add chopped nuts, chocolate chips, or a fruit layer for added flavor and texture.
