Ingredients
  

For the Brownie Base:
  • 1 cup unsalted butter melted
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
For the French Silk Mousse:
  • 8 ounces semi-sweet chocolate chopped or use chocolate chips
  • 1 cup heavy cream
  • 1/2 cup unsalted butter softened
  • 3/4 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 large egg yolks
  • 1/2 teaspoon salt

Method
 

To Make the Brownie Base:
  1. Preheat oven to 350°F (175°C). Prepare a 9×13-inch baking pan by greasing it with butter or lining with parchment paper.
  2. In a large bowl, combine the melted butter and granulated sugar. Stir until smooth. Add the cocoa powder, mixing until well combined. Add the eggs, one at a time, stirring after each addition. Stir in the vanilla extract and salt.
  3. Gradually add the flour and mix until just combined. The batter should be thick.
  4. Pour the batter into the prepared pan, spreading evenly. Bake for 20-25 minutes or until a toothpick inserted comes out with just a few moist crumbs. Let cool completely before adding the mousse.
To Make the French Silk Mousse:
  1. Melt the semi-sweet chocolate by microwaving it in 30-second intervals, stirring after each, until smooth. Set aside to cool slightly.
  2. In a stand mixer, beat the softened butter until creamy. Add the powdered sugar and beat until light and fluffy.
  3. Add the egg yolks one at a time, mixing well after each addition. Add the vanilla extract and salt, mixing until smooth.
  4. Gradually add the melted chocolate and mix until combined.
  5. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until smooth and well combined.
To Assemble:
  1. Once the brownies have cooled, spread the French Silk Mousse evenly over the brownie base.
  2. Refrigerate for at least 2 hours to allow the mousse to set.
  3. Once set, slice into 12-16 squares and serve!

Notes

  • Chill Time: Make sure to refrigerate the brownies for at least 2 hours for the mousse to fully set and firm up.
  • Room Temperature Ingredients: Ensure the butter is softened and the eggs are at room temperature to achieve a smooth mousse.
  • Storage: Store in an airtight container in the fridge for up to 1 week. The brownies can also be frozen for up to 3 months.
  • Customization: You can add chopped nutschocolate chips, or a fruit layer for added flavor and texture.
