Ingredients
  

  • 1 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon espresso powder optional
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup full fat Greek yogurt
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup olive oil or neutral oil
  • 1 1/4 cups chocolate chips divided

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. Whisk flour, cocoa powder, espresso powder, baking powder, and salt in a bowl.
  3. In another bowl, whisk yogurt, sugars, vanilla, and eggs until smooth.
  4. Add the oil and whisk until glossy.
  5. Fold in the dry mix gently until just combined.
  6. Stir in most of the chocolate chips.
  7. Pour batter into the pan and sprinkle the rest on top.
  8. Bake for 50 to 60 minutes or until a toothpick comes out with moist crumbs.
  9. Cool before slicing for the best texture.

Notes

Use room temperature eggs and yogurt.
Do not overmix once dry ingredients are added.
Cooling time helps the crumb set and stay moist.
Dutch process cocoa gives a richer flavor.
