Ingredients
  

For the Crust:
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2/3 cup powdered sugar
  • 12 tablespoons unsalted butter melted
For the Filling:
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 cup fresh lemon juice about 3 lemons
  • Zest of 3 lemons
  • 8 large eggs room temperature
  • Powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. For the crust, whisk together 2 1/2 cups flour, salt, and powdered sugar. Add melted butter and mix until dough forms.
  3. Press dough into the baking dish and bake for 20 minutes or until light golden.
  4. In a bowl, combine granulated sugar, flour, and lemon zest. Add fresh lemon juice and eggs, whisking until smooth.
  5. Pour lemon filling over the cooled crust.
  6. Bake for 25 minutes or until the filling is set and the edges are golden. Let cool for 1 hour, then refrigerate for 2 hours.
  7. Dust with powdered sugar before serving. Slice with a sharp knife.
