Ingredients
  

  • 1 fully cooked bone-in or spiral ham 8 to 10 pounds
  • 1 cup brown sugar
  • 1/3 cup honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter
  • 2 tablespoons apple cider vinegar
  • Pinch of cloves or cinnamon optional

Method
 

  1. Preheat the oven to 325°F and place the ham cut-side down in a foil-lined roasting pan.
  2. Score the ham with shallow diagonal cuts to help the glaze absorb.
  3. Cover loosely with foil and bake until warmed to about 120°F.
  4. Prepare the glaze by simmering brown sugar, honey, mustard, butter, and vinegar until thickened.
  5. Brush generously over the ham, uncovering it for caramelization.
  6. Continue roasting uncovered, basting every 20 to 30 minutes.
  7. Add a final coat of glaze before removing from the oven.
  8. Rest the ham for 10 to 15 minutes before slicing.

Notes

Bone-in ham gives the best flavor and juiciest texture.
Warm glaze sticks better than cold glaze.
Keep ham covered early, then uncover later for browning.
