Ingredients
  

For the Cookie Base:
  • 2 ¼ cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Unsalted Butter softened
  • ¾ cup Granulated Sugar
  • ¾ cup Light Brown Sugar packed
  • 1 teaspoon Vanilla Extract
  • 2 Eggs room temperature
  • 2 cups Semi-Sweet Chocolate Chips
For the Caramel Sauce:
  • 5 ounces Evaporated Milk
  • 1 bag 14 oz Caramels
  • ½ cup Peanut Butter

Method
 

  1. Prepare the Oven and Pan: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking pan and set aside.
  2. Make the Cookie Dough:
  3. In a small bowl, whisk together the flour, baking soda, and salt.
  4. In a large bowl, cream the butter, granulated sugar, brown sugar, and vanilla extract until smooth.
  5. Add the eggs, one at a time, beating well after each addition.
  6. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  7. Fold in the chocolate chips.
  8. Bake the First Layer:
  9. Spread half of the cookie dough evenly into the prepared pan.
  10. Bake in the preheated oven for 8-10 minutes or until lightly golden.
  11. Remove from the oven and set aside.
  12. Prepare the Caramel Layer:
  13. In a double boiler, melt the caramels and evaporated milk, stirring occasionally until smooth.
  14. Stir in the peanut butter and mix thoroughly.
  15. Assemble the Bars:
  16. Spread the melted caramel mixture over the baked cookie base.
  17. Drop spoonfuls of the remaining cookie dough over the caramel layer.
  18. Bake the Bars:
  19. Return the pan to the oven and bake for 15-20 minutes, or until the top is light golden brown.
  20. Allow the bars to cool completely before cutting into squares.

Notes

  • For a nutty twist, you can add chopped pecans or walnuts to the caramel layer or the cookie dough.
  • If you prefer a less sweet version, consider using dark chocolate chips or reduced-fat peanut butter.
  • Make sure to let the bars cool completely before cutting for clean, neat squares.
  • These bars can be stored at room temperature for 3-4 days in an airtight container, or up to 7 days in the refrigerator.
