Ingredients
  

  • 1 cup 226 g unsalted butter, room temperature
  • 1 cup 200 g granulated sugar
  • 1 cup 125 g all-purpose flour, spooned and leveled
  • 1 cup 135 g cake flour, spooned and leveled
  • 2 large eggs room temperature
  • 4 egg yolks room temperature
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk room temperature

Method
 

  1. Preheat oven to 325°F (163°C). Grease a 9 x 5-inch loaf pan and line with parchment paper.
  2. Cream butter and sugar in a stand mixer on medium-high speed for 4-5 minutes until light and fluffy.
  3. Add eggs, one at a time, followed by the egg yolks, and mix until smooth.
  4. Stir in vanilla extract until fully combined.
  5. Combine the flours, baking powder, and salt in a separate bowl. Gradually add to the wet mixture, alternating with milk, until just combined.
  6. Pour batter into the prepared pan, smooth the top, and bake for 60-65 minutes. Check for doneness by inserting a toothpick — it should come out clean or with a few crumbs.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a fluffier cake, use a combination of all-purpose and cake flour.
  • Room temperature ingredients (butter, eggs, milk) help create a smoother batter and better texture.
  • Don’t overmix the batter to prevent a dense cake.
