Ingredients
  

  • 2 lbs carrots peeled and sliced into ½ inch pieces
  • ¼ cup butter melted
  • cup brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • teaspoon nutmeg
  • 1 tablespoon chopped parsley for garnish

Method
 

  1. Place the sliced carrots in the slow cooker.
  2. In a small bowl, whisk together butter, brown sugar, salt, cinnamon, and nutmeg.
  3. Pour the glaze over the carrots and toss to coat evenly.
  4. Cook on HIGH for 3 hours or until carrots are tender.
  5. (Optional) To thicken the glaze, remove the lid and cook for an additional 15 minutes.
  6. Garnish with chopped parsley and serve.

  • For a thicker glaze, let the carrots cook uncovered in the last 15 minutes.
